Hawaiian Haystack Recipe: Uncle Wade Style

Well, I've been looking through my recipes again. (Hmmm, what to make for dinner?) I found this gem from 1999 when I asked Uncle Wade to send me his Hawaiian Haystack recipe.  I first ate Hawaiian Haystacks at Uncle Wade and Aunt Joanne's house as a kid, and I remember how delicious it was and the crazy, vast array of toppings!  It was at their house in Utah.  Does anyone else remember that?
Anyway, this is what Uncle Wade sent me.  I hope you get a kick out of it, especially you, Dad.


Here's my version of a good Hawaiian Haystack recipe:

1/2 cup butter
1/2 cup flour
1 onion, diced
1 tsp or less of salt
1/2 tsp pepper
1 tsp garlic powder
1/4 tsp ground ginger
1 T. soy sauce
2-1/2 cups milk
3-1/2 cups chicken broth
2 cups cooked chicken, chopped

Melt butter, then add flour and onions and let bubble for one minute until slightly brown.  Add a little bit of milk, stir, then add a little more, stir, then add all the liquids.  Use a whisk to stir to get out all the lumps.  Add seasonings and continue to stir until mixture boils and thickens slightly, about one minute. Turn to low, add chicken.  Serve over rice and add toppings.  The rule at our house is at least two different types of veggies must be consumed so put out a good selection.  And don't forget the leis and ukulele music in the background.

shredded cheese
green onions
tomatoes, diced
peppers, diced
celery, diced
matchstick carrots
avocado
shredded coconut
pineapple tidbits
sliced almonds
