Green, Eggs and Ham

This is our traditional St. Patrick's dinner. And we love it. Also, HAPPY BIRTHDAY KEN!!



Green, Eggs and Ham


1 bunch asparagus
1 pack deli ham slices
10 eggs
mozzarella cheese, as desired


  1. Grease a 9 x 13 pan VERY WELL. Heat oven to 400F.
  2. Wash and trim asparagus stalks. Count them. Divide them into 8 groups
  3. Take the ham and wrap the asparagus groups. My ham slices were small, so I used 2 pieces of ham for each bundle. Arrange the bundles in the baking pan.
  4. Whisk the eggs in a bowl. (You can also just crack the eggs and plop them on top of the bundles, but it isn't as uniform that way.) Add salt and pepper. Pour the eggs over the bundles.
  5. Put cheese on top.
  6. Bake for 15 minutes or until the cheese is golden and the eggs aren't liquid.


Serve with toast to get every food group on the same plate!

Josie's Blessing Announcement


We are going to be blessing Josie at Mom and Dad's house the weekend they get home from Florida. I am so excited to see them and to enjoy this sacred experience together.
